5 /5 Natalie Gemma: We were staying at the hotel and decided to try the restaurant, and we were so glad we did! The space itself is stunning, elegant, modern, and welcoming. The food was fresh, flavorful, and beautifully presented, showing real attention to detail. We chose the set menu, which offered a great variety and excellent value, and each dish was a delight. The staff were friendly, attentive, and genuinely made us feel looked after throughout our meal. Overall, it was a wonderful dining experience, and we would highly recommend Cyan to anyone staying at the hotel or even just visiting for a special meal!

5 /5 Aidan Barlow: More affordable than you might think with a set 3 course menu option for £40 or two courses for £32. We enjoyed the steaks, cooked nicely with peppercorn sauce, and a pea and mint soup to start. There are other British classics like fish and chips, roasted chicken, and a posh burger on the menu as well as other salads and mains. Service was friendly and punctual, the atmosphere was relaxed and not stuffy in any way.

5 /5 Red Fox Bites: Highly recommend Going to be my go to recommendation now for anyone visiting Brighton and a must go now when ever I visit. We walked in without a reservation and unfortunately they didn’t have any seating but the host was very polite and got a table for us within an hour. We came back, got seated and ordered the: Toasted Focaccia bread and glazed pork belly to start with. Both full of flavour and brilliantly prepared, the focaccia with a soft crunch and light butter spread wasn’t heavy at all the the pork belly melted in your mouth. For the mains we had the Rump of lamb and Lobster & Salmon burger, both amazing aswell but if I had to choose one the lamb was just a bit nicer, needless to say that the burger wasn’t short on flavour either. For drinks we ordered a peach Lexington ice tea (non-alch) and a margarita which didn’t fail to disappoint. I want to highlight again how great the staff were, their attitudes made all the difference and made the whole experience more enjoyable.

5 /5 Bill Murphy: We had Sunday lunch - at the Cyan restaurant- it was brilliant, for me the best Sunday lunch in Brighton. The service is attentive, friendly and efficient. The food is excellent- what I really like is the great selection of vegetables. I had the nut roast and my husband had the sea bass.

5 /5 Taylor Thunderbear: Like walking into a beautiful aquarium with alcohol and popcorn. We were greeted with service colleagues eager to help, and nothing was too much trouble for them. Happy to bring over more popcorn when our bowl was empty. The one downside was then bringing over the bill as soon as they gave the drinks. Couldve asked if we wanted more drinks. Would recommend 100%
