5 /5 StaraBrighton Brighton: We visited for the tasting menu and were absolutely blown away by every single dish. This is fine dining at its very best — beautifully presented plates, incredible flavours, and a real sense of care in every course. It’s definitely a treat and on the pricier side, but it was worth every penny, and the 50% off through FirstTable made it even better. The whole experience was amazing from start to finish. We can’t wait to return

3 /5 Malcolm Braganza: We opted for the short tasting menu, with the additional snack starters providing a lovely and flavourful introduction. The truffle custard was divine, followed by a beautifully laminated brioche paired with a rich liver parfait – absolutely delicious. The halibut was scrumptious, and the South Downs deer was moist and succulent; the loin was perfectly cooked, though the shoulder was slightly chewy. Unfortunately, the dessert was a let-down compared to the high standard of the preceding courses.

5 /5 Emma J Crosby: Dilsk in Drakes Hotel is fine dining at its best. Their tasting menu is divine, beautifully presented, and every course is delivered with perfect timing. There are some establishments where youre still hungry at the end of the experience, but not here. Exactly the right amount of food. The restaurant is cosy, comfortable, and while low-lit, the big candles / LED table lamps provide enough light to see what youre eating. The staff are fantastic - professional yet friendly, and highly knowledgeable. Faultless.

5 /5 tina hh: What can I say but WOW, WOW, WOW. This is definitely the best fine dining restaurant in Brighton. It’s only small, perhaps 20 covers and each one is lovingly made. We both had the 10 tasting menu. Everything was delicious and some things were mind blowing. I am pescatarian so the meat dishes were swapped for their vegetarian menu. Usually I feel a bit peeved at this, as they tend not to be as as tasty as the meat one but in this case they were better. The beetroot with walnut sauce OM life was the best veggie food ive ever eaten …. well until the next course, the pumpkin blew my mind. To get that much flavour and texture in to veg is astonishing, next time I may have the full 10 veggie tasting menu. The bread was also totally wonderful. I really appreciate how the butter was changed on that and dashi on the scollop. The truffle custard was delicious & I’ve never had anything like it before. It doesn’t have to be a special occasion to come here, they also have a smaller tasting menu and an incredibly priced £40 set menu that I will definitely trying in the future. The staff were very lovely and efficient, it’s a really welcoming space with a lovely atmosphere, we will be back.
